In the Final Episode of our “Ooni in Rome: Passion for Pizza” series, we meet Valerio Belluccini at his restaurant, Pizzeria Ostiense, in Rome’s Testaccio neighbourhood. Their signature dish is a paper-thin pizza crust that’s delicate but crispy – it’s one of the best Roman-style pizzas in the city.

Once an industrial zone used as a hub for food vendors bringing goods into the city, these days Testaccio is home to well-known restaurants like this newcomer pizzeria.

In the first episode of our “Ooni in Rome: Passion for Pizza” series, we visit Antico Forno Roscioli in the heart of Rome. A renowned bakery known for its high-quality breads and classic Roman pizza by the slice, their bakers cook super-long pizza that’s thin and crispy for patrons to pick up pizza bianca and pizza rossa to go.

Owner Pierluigi Roscioli heads up their collection of family-owned food venues around Rome, including bakeries, a restaurant and a cafe. We spoke to him at their bakery headquarters to find out why their Roman pizza is so delicious.

Naples may be the home of the first ever, original pizza, but there’s another Italian city that’s a destination for truly great pizza – Rome.

Classic Roman pizza features a thin crust, with a dough that’s almost like a flat focaccia. It’s sold by the slice in bakeries across the city as pizza bianca (white pizza) and pizza rossa (red pizza), topped with either olive oil and salt or a simple tomato sauce. In the final episode in the series, we meet Joe Riggio. Before the iconic Madison Square Garden even existed in downtown NYC, Sicilian immigrant Salvatore Riggio opened NY Pizza Suprema across the road in 1964. Right up until 1988, the restaurant was long known for its ‘plain slices only’ motto, serving only pizza topped with freshly made tomato sauce and cheese. With son Joe now at the helm, this Manhattan institution has expanded into a by-the-slice buffet, offering up both large Neapolitan- and Sicilian-style pies to queues of hungry patrons.

In the third episode, we meet Giorgia Caporuscio. Born and raised in Italy, Giorgia moved to the United States at 19 years old, and soon began training as a pizzaiola with her father – renowned pizza maestro Roberto Caporuscio.

Nowadays, she’s celebrated as an exciting new leader in pizza, having been awarded first place in the “Classic Pizza” category (one of only two women to ever win the prize) at the 2013 Caputo World Cup Pizza Competition in Naples. These days, Giorgia heads up the Don Antonio and Kesté Pizza & Vino restaurant families in NYC, and passes on her pizza making skills as lead instructor at the Pizza Academy Foundation, opened at Kesté’s Fulton Street location in 2007.
